Naughty Nougat Cake

I should not really give you this recipe. Once you have it I can never impress you at parties again, because you will know how simple it is to make something so delicious it interferes with your ability to speak. It is from a Linda McCartney recipe and she is the one who called it that. It's so good it has not even been allowed on the internet yet, so there are no pictures of it and I will have to write out the recipe here myself.

Oh well.....

Serves 10 - 12

300g / 10 1/2 oz Ground Almonds

350 g / 12 oz Refined Icing Sugar

6 large Free Range Egg Whites

50 g / 2 oz Butter

50 g / 2 oz Dark Chocolate, broken into pieces

30 ml Strong Black Coffee

2 large Free range Egg Yolks

2 TBSP Shredded Almonds, toasted, for sprinkling on top

Sift all Ground Almonds and 300 g of icing Sugar into Bowl.

Whisk the 6 egg whites till stiff in a mixer. Stir a quarter into almond/sugar mix then fold in the rest.

Put this into a well greased and lined 9 inch round cake tin

Bake at 350 degrees for about 45 minutes. Should be browned but not overdone. Allow to cool and then put out on plate.

Cream the remaining Icing Sugar with the butter. Melt the chocolate in a  bowl over hot water. Put the chocolate in fridge for 10 minutes to cool. Beat the 2 egg yolks into butter/sugar mix. Beat until pale and creamy then add the cooled chocolate and the coffee.

Put this icing over the whole top of cake, and then sprinkle with lightly toasted almonds.
